The white Silvaner - or Sylvaner - is one of the oldest grape varieties cultivated by humankind. in South Tyrol, it is mainly grown
in the Eisacktal, the northernmost wine-growing region in Italy. The taste of the Sylvaner depends, mor than for most other wines,
on the soil conditions. On loamy soils it remains rather neutral, however, the gravelly, mineral-rich soils of the Area around Brixen,
with their specific microclimate, allow a mineral, racy and elegant Sylvaner to flourish, reminiscent of fresh hay and gooseberries
in smell. The distillery Zu Plun obtains the pomace for its particularly pure, varietal Grappa Sylvaner from the winery Taschlerhof
and the Neustift Monastery near Brixen.
